Want to add more healthy fungi to your vegan diet? Here is a recipe on how you can prepare a tasty lion’s mane mushroom dish. You will need 250 grams of lion’s mane mushroom, vegan butter or frying oil, and 2 cloves of garlic. Start by slicing the big, thick stems from under the mushrooms and cut the remaining section into thin slices. Lightly fry the chopped garlic and add the lion’s mane slices into the pan, frying each side for 2 minutes or until they are golden brown. Add more vegan butter or oil if the pan dries out. Flip the mushroom slices over and repeat. Once cooked, transfer them onto a plate and add a sprinkle of salt and black pepper to season.
