Cut two pounds (900 grams) of fresh watermelon into cubes and add it to a blender along with the juice of two limes, two Medjool dates, and a handful of fresh mint leaves. Blend everything together until smooth and pour it into a shallow tray, leaving it uncovered in the freezer. Stir the mixture occasionally over the next two to three hours until your slushie is at the preferred consistency. You can also store the slushie mixture in a sealed container in the freezer for five to seven days if not consumed immediately. If you choose to store it, let it sit at room temperature prior to serving so it can return to a slushie consistency.
