What makes the Winter Olympics very demanding are the extreme conditions in which the athletes train and compete. Sub-freezing temperatures in snow and ice, make for challenges that require athletes to not only be fit, healthy and skilled, but astute, aware and mindful. Our feature today is on three very talented, plant-based athletes, who have competed or will compete again in the Winter Olympics.
